Every batch of shrub is made with different seasonal fruit. This one is was made in the depth of winter and reminds me of a big shiraz!
Made with Tasmanian berries, when it was first brewed it smelt and tasted like Ribena but as it fermented and got more complex, those sweet notes turned into winey notes! It’s a very unique shrub. Which was my first foray into a honey based shrub - which is actually an oxymel! (see the blog post to understand what the hell I’m talking about!) I used the best honey money can buy and it brought amazing results!! The fruit is simply fermented and then steeped with local Apple cider vinegar. Raw an probiotic!

Blackcurrants (Clark Family Farm, Westerway, Tas)
Yellow Box Honey (Malfroys, NSW)
Apple Cider Vinegar (Lirah, QLD)
Serving Suggestions
Add to still or fizzy water like a cordial! Add a dash to a glass of prosecco for a Kir Royal style beverage! Also great in a vodka tonic. A shrub can be treated like a drink or you can use it in a salad dressing. Try with olive oil over a grilled chicken salad.
