Every batch of shrub is made with different seasonal fruit. This one with ruby red grapefruit from my neighbour, Malfroy’s honey and some rosemary from my garden.
This one has no sugar at all and is my 3rd honey based shrub - which is actually an oxymel! (see the blog post to understand what the hell I’m talking about!) I used the best honey money can buy and it brought amazing results!! The fruit is simply fermented and then steeped with local Apple cider vinegar. Raw an probiotic!
The grapefruit is bitter and sour and the rosemary brings a woody aroma all tied together with sweet honey. Perfect for a natural aperol spritz.

Ruby Grapefruit (Peter Brandis, Kangaroo Valley, NSW)
Yellow Box Honey (Malfroys, NSW)
Apple Cider Vinegar (Lirah, QLD)
Rosemary (Kangaroo Valley, NSW)
Serving Suggestions
Add to still or fizzy water like a cordial! Add a dash to a aperol spritz or a martini. Also great in a vodka tonic. A shrub can be treated like a drink or you can use it in a salad dressing. Try with olive oil over a crisp green salad with smoked salmon.
